Cheesy Cauliflower Nachos

What kind of recipes do I like? 

  • Minimal Ingredients – and most I already have
  • Tastes as good as it looks
  • short prep and bake time

This recipe fits into all of those categories!!!

1 Medium head of cauliflower, cut into florets (or you can get the pre-cut packages)

1/2 each of green, red, and yellow peppers, cut into small pieces.

2 tsp. Olive Oil

1/4 tsp. Sea Salt

1/4 tsp. Chili Powder

1/4 tsp. Garlic Powder

1/2 cup Pepper Jack Cheese

1/2 cup Pico de Gallo

1/2 Medium Mashed Avocado


  1. Preheat oven to 425 degrees
  2. Place cauliflower and peppers in a large mixing bowl. Drizzle with oil. Sprinkle with Salt, Chili Powder, and Garlic Powder. Toss gently to blend. Spread evenly on baking sheet.
  3. Bake for 35 minutes, or until tender-crisp and golden.
  4. Evenly top with cheese. Bake for 3 – 5 minutes, or until cheese is melted.
  5. Evenly top with tomato salsa and avocado; serve immediately.

You can look forward to my favorite recipes, fitness motivation, success stories, and valley and mountaintop experiences along the way.

I’ve been a fitness coach for a while now (2 years give or take) and I’ve documented informally on various social media accounts. I have had a few people reach out to me to ask if I have a blog – and I thought, it’s better late than never right?

The good news for you is – I have a lot of stories to tell already! A lot of inspiring stories, and awesome recipes that I’ve come to love over the past 2 years. I’m excited to share them with you.

I would love to connect with other busy moms, teachers, or runners who are excited to be on, or start a fitness journey of their own.

One of my goals as a coach is to attend several leadership events over the next year. I plan on using this Blog as documentation along the way – so feel free to tag along, and invite someone to join in too!
